Cauliflower and Bacon Salad


This salad is so easy and so good that people who don't even care for Cauliflower love it! I traded my Carrot Cake recipe for this recipe with my supervisor when I was working for the Phone Company. I am not sure if she created it but she definately did perfect it!

1 head of Cauliflower
1 lb. Bacon
1 Bunch of Green onions
5 - 8 oz. Shredded Parmasan cheese

Fry the bacon and cut into bite size pieces, reserve the bacon grease. Cut the Cauliflower into bite size pieces, rinse in cold water and spin dry in a salad spinner or drain and pat dry on a paper towel. Slice the Green onions. Add all together in a large bowl and mix. I like to saute the onions just a little bit in some of the left over bacon grease myself before adding to the cauliflower and bacon but it's not required.

In a smaller bowl mix:

1 1/2 C. Mayonnaise
1/4 C. milk
a little of the reserved bacon grease, just enough to smooth out the dressing.
Seasoning Salt to taste. By this, I mean, add a little, taste it, add a little more, taste it. Keep in mind that the bacon is fairly salty already and that you can always add more later but you can't take any out if you over do it.

Pour the dressing over the Cauliflower mixture and gently stir until all the florets are coated. Sprinkle the Parmasan cheese on and continue stirring until it is well distributed within the other ingredients. At this point, taste it again and decide if you want to add more seasoning salt or not.

Chill for atleast 2 hours but can be chilled overnight as well.

Serve and Enjoy!
