Menu Plan Monday

Or Sunday, as it happens :)

The MPM event actually starts on Sunday evening, and this works great for me. I usually start working out next week's menu on Friday or Saturday so that everyone in the house has a chance to review it or make requests for what they would like to see on the menu. It gives me time to go through the freezers and pantry to see what I need to use up and figure out what I need to buy for coming meals as well.

This week I am going to make up some freezer meals. Today, I am roasting 2 whole chickens, 1 for dinner tonight and 1 for some casseroles I want to make up. I will be making 2 pans of Chicken Enchiladas, and an easy Chicken Cordon Blue Casserole. Both of these are family favorites and freeze really well.

Breakfasts this week will be the usual, cereal, fresh fruit, toast. Weekend Breakfast are considerably hardier. If I want to get my husband and dad to get anything done around the house (and not run off with their fishing poles), I got to make the Grand Slam for them :)

Lunches this week will be Turkey Sandwiches (got a great deal on lunch meat!) When that runs out I might make up some Egg Salad. We also still have a good deal of crackers and cheese to snack on, and I am thinking about making some Soft Peanut Brittle. My dad is down to his last piece of Rat Turd Pie, so I will probably have to make another one of those too. Please come home soon Mom...

Monday - make freezer casseroles
Easy Chicken Stew with Dumplings, if there are any leftovers from this meal I will slap a Bisquick crust on it for a Chicken Pot Pie and stick in the freezer too :)

Tuesday - vacuum/dust/mop...again
I found these tasty looking recipes for Spaghetti a la Philly and Rice Lasagna on Jane4girls800dollarannualbudget and I have been wanting to try both, so dinner will be one or the other. Thanks Erin!
Steamed Broccoli
Garlic Toast

Wednesday - starting some garden seeds!
Breakfast for Dinner!
I am going to try these Yummy looking Sweet Potato Waffles and hope the boy likes them because if he does then YAY - he's adding something new to his diet!

Thursday - shopping, if needed
Pizza!
I have been dying to try this recipe for Buffalo Bacon Ranch Pizza!

Friday - laundry
Chicken Enchiladas
Green Salad
Cottage Cheese

Saturday - yard work
Meatloaf
Baked Sweet Potatoes or Squash
Leftover Green Salad

Sunday - get the Garbage out, plan next week's menu ;)
Leftovers, or soup and sandwiches

So funny about good breakfast = good work from the men! My hubby is a breakfast eater in the serious fashion - he would eat it 3 times a day if he could get away with it.

Sounds yummy! Can you post the recipe for the easy Chicken Cordon Blue Casserole? I click on it, and it takes me to the Chicken Enchiladas, which also sound delish!

Yum! Love the sound of Bacon Ranch Pizza. Think it's time for homemade pizza or calzones over again soon to. Or Quesadillas... suddenly I have a huge cheese craving!

I have a chicken cordon bleu pasta recipe on my page.. its a bit different than yours, but also delish. :) Your week sounds great, I wish we could do yard work, we have snow and mud :(

I get nervous at the dentist just for a cleaning.. I am a weirdo or something, they probably think I am a wack.. I am normal in other aspects of life haha! Your menu sounds wonderful! I am wanting some pizza! We had enchiladas last night and they were wonderful!
I love how you post your meal for the day and what you need to get done that day. Awesome idea.
I would LOVE to be started with my garden, but we have snow. And it's snowing now. And we're supposed to get MORE snow. Have fun with your garden!!!
